Blanc de Blancs

Blanc de Blancs is Champagne at its most austere and, in the right hands, its most profound. Made exclusively from Chardonnay, almost always from the Côte des Blancs though the Sezannais and parts of the Aube also produce fine examples, these wines carry a precision and mineral tension that sets them apart from blended cuvées.

In youth, the best examples are tightly wound: green apple, citrus zest, chalk, and a steely acidity that can seem almost forbidding. With time, and these wines repay time generously, they open into something altogether more complex. Toasted brioche, white flowers, and a saline, almost oyster-shell minerality that is the signature of the grand cru villages of Avize, Cramant, and Le Mesnil-sur-Oger.
