The 2022 Polígonos San Pablo Verdejo comes from vines at 1,400 meters in altitude that ripen slowly, later than Chardonnay. It fermented and matured in concrete to respect the varietal character (oak eats Verdejo, Sebastián Zuccardi told me), and it keeps the fresh and floral character through moderate alcohol (13%), very high acidity and great freshness. 2,600 bottles were filled in August 2022.
